Rice flour drumstick recipe (gluten free)

Ingredients for making rice flour drumstick (gluten free):
2 cups of rice flour
2 cups of chicken stock
2 tablespoons of butter or margarine
1 tablespoon of oil (optional)
salt
stuffing to taste
cornmeal or cassava flour (for breading)
frying oil
How to make rice flour drumstick (gluten free):
Preparing rice flour coxinha is the same as preparing the traditional coxinha. In this recipe, we recommend using homemade chicken broth (resulting from cooking the meat) instead of the common broth tablets, so the coxinha will have a homemade taste and no traces of gluten.
In a large saucepan, place the chicken stock and butter or margarine and bring to a boil. Correct the salt if necessary.
Then add the rice flour all at once and stir vigorously until it comes free from the bottom of the pan. You can add a little oil to help or more rice flour if the dough is too soft.
Transfer this gluten-free coxinha dough to a smooth, greased surface and knead well for about 5 minutes. Let cool.
Meanwhile, prepare the filling to your liking. When you're ready, remove a piece of dough, open it in your hands, place the filling in the center and close it in a coxinha shape.
Your rice flour drumstick (gluten free) is ready! It remains to bread, passing it first through beaten egg and then through manioc flour. Bake or fry in hot oil until golden and bon appetit!
